Red Beans and Rice

2 tbsp olive oil

2 green peppers, diced

2 onions, chopped

2 ribs celery, chopped

6 cloves garlic, minced

1 1/2 tsp Cajun seasoning**

1/2 the meat from Frances’ Roast Chicken or 1/2 lb other cooked chicken, chopped

1 tsp dried oregano

1 tsp dried thyme

2 cans red kidney beans

3-5 c (depending on what fits in your skillet!) chicken broth

6 c cooked Jasmine rice

1. Heat oil, med-hi heat. Add onion, green pepper, and celery. Cook and stir for 12 minutes. Add garlic, cook 4-5 minutes more.

2. Add spices, broth, and beans. Bring to a boil, turn down heat, and simmer 15-20 minutes, covered.

3. Add chicken and heat through. Serve over rice.

 

**Cajun seasoning:

2 tsp freshly ground pepper

1 tsp garlic powder

1 tsp onion powder

1 tsp red pepper flakes

1 tsp paprika

Mix together and store in an air-tight container.
